And our stay here at Myrtle Beach is half over!!! Doesn't seem like we've been here that long!!!
Good Morning .. Lots of sky pictures this morning .. I watched as the clouds changed .. and changed .. and changed .. and that bright ball of fire finally rose into the sky!!!
6:36 .. I thought the bank of dark clouds that looked like it was sitting right on top of the ocean with the sun just barely starting to peek through was an interesting sight .. grabbed my camera and started watching as things started changing bit by bit ..

We had a really late night last night .. very very close to midnight when we made it "home"!! The dinner Edna and Vivian put together was delicious .. Baked Pork Chops / Pork Tenderloin/ Au Jus / Rosemary Roasted Potatoes / Roasted Caulifower / Mandarin Orange Salad / Rolls and later a dessert that I worked really hard on .. a Turtle Cream Pie from the freezers at Wal Mart!!! And of course the evening ended with a couple of card games .. George was the big winner at Liverpool Rummy and Ken was the big winner at Golf .. I personally was the big loser at both games .. but I had a lot of fun losing .. LOL!!!
This morning we ladies are going to a cooking class at The Santa Maria provided by the Caravelle group .. at the time we left last night the guys still hadn't decided what they were going to do while the ladies were cooking but they were determined they would do SOMETHING .. LOL!!

It wasn't a very large lunch but it was very tasty .. and we enjoyed visiting with the others at the table as we ate!
CHICKEN PICCATA
In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.
** Our Chef also added wine as he was cooking it.
The guys eventually made it back from their morning adventure .. they had gone to a place called "Burky's" for sandwiches for Lunch.
After getting back to our place I was looking out at those big waves rolling in and noticed some surfers out on the water .. of course I had to grab my camera and get a video to share!! Learning how to cook Chicken Piccata!!!
Sad to say I didn't catch his name but our "teacher" is the Sous Chef at The Santa Maria!!
He cooked only 1 Breast to show us how to do it ..
But from the kitchen out came a large pan of Chicken Piccata to share with us for Lunch!!!
I was expecting not to like it but to my surprise it was actually very tasty!!!!
It wasn't a very large lunch but it was very tasty .. and we enjoyed visiting with the others at the table as we ate!
CHICKEN PICCATA
- 2 skinless and boneless chicken breasts, butterflied and then cut in half
- Sea salt and freshly ground black pepper
- All-purpose flour, for dredging

After our Chicken Piccata lunch we donned our jackets / coats and walked in the rain to Vivian's place at the Sea Mark where we settled into a rousing and very fun game of "Labyrinth" .. I had heard of the game before but never played it!! It is great exercise for the "logic" part of your brain .. and lots of laughs when someone else messes up the path you spent so much time deciding was the way to go .. LOL!!! I thoroughly enjoyed it .. AND I actually won!!! Thanks more to LUCK than to my brain .. LOL!!

It's been fun walking on the beach but the sky is getting dark .. looks like the rain is coming in again .. time to head back to the room!! It wasn't as cold as we thought it would be .. the heavy coats helped of course .. LOL!!!

ReplyDeleteI so enjoyed listening to the Atlantic Ocean !! Awesome Video and seeing the Surfers too ! I would be afraid to do that because of Sharks. I thought your cooking school was actually you and the other ladies cooking. That was more like a demonstration and then, eating lunch --It looked really good ! Glad you are having fun ! I am also happy that the weather is going to change and get warmer for you ! Yeah !!
ReplyDeleteIt would have been nice had we been able to cook too but they're just not set up for that. I was surprised that they didn't have copies of the recipe to pass out .. thought that was a bit strange!!! I got the recipe I posted by going to Google. They say it is going to get in the sixties tomorrow BUT it's also going to rain .. wouldn't you know it .. LOL!!!
ReplyDeleteI loved the Video !! It was almost like being there !! The waves almost got Ken !! Good pics of Ken and good pic of you !! That was funny at the end, I thought you might have slipped ! (LOL) --Yes, I could see your light in your room ! Those were nice seashells , Ken !! -- You could tell by the clouds ,a storm was coming in --You got a good pic of the flying bird and the one walking on the beach ! As Maddy says, "Good Job." !! It was good to hear your voices too !! Sending you Both Love and Hugs ! Katrena just called and said that they said she has tendonitis in her shoulder (Rotary Cuff) --I had an injured Rotary Cuff once from work. She has to take therapy like I did and also Cortisone shots like I had ,but she has to find out from her allergy doctor if she can take it because she has a shot a week for that. I sure hope she can because she will feel 100% better ! She said I-70 home from that game was really scary and she had other girls in her car too. We are suppose to have a warm up this week also . Enjoy the Grammy Awards ! I am taping them !
